Hometown: Milford, Conn.
What experience do you have? “I have been here a little more than a year, and before that, I was with the Ritz-Carlton Resorts and La Playa Beach and Golf Resort.”
What is the first drink you ever had? “My mom used to make strawberry daiquiris.”
What’s the last drink you had out?
“I had a Kir Royale at the London in New York.”
What’s your favorite drink? “Crown and diet for a cocktail or big bold reds.”
What is your favorite bar besides Doubletree? “I used to love the Tiki Bar at the Vanderbilt Inn. That’s where I got engaged and also where I had my first dinner when I came to Naples.”
Do you have any back of the bar advice? “Cleanliness is next to godliness.”
What was your largest tip?
“A thousand dollars for working at an off-site property.”
When is happy hour at Doubletree? “It is 5 p.m. to 7 p.m. daily with $3.50 drafts, $6 wines and buy-one, get-one free wells. Our well drinks are quality.”
What is your favorite bar food?
“I love Doubletree’s beer-battered grouper fingers.”
Are you using any new ingredients? “We just started using Malegro. It’s a high quality, top-shelf tequila that comes in a crystal bottle.”
Do you have any superstitions before you start work? “I make sure I kiss my kids in the morning and tell them to have a good day.”
What is your favorite garnish? “Blue cheese stuffed olives. It’s the extreme stuff that makes the difference.”
What is your favorite time of day?
“5 p.m. It has to be 5 p.m. somewhere.”
When was the last time you had to look up a drink? “It was a shot for a wedding party and it wasn’t even in the book.”
Who would like to have a drink with? “I would have loved to have a drink with my granny. I never met her, but my mother always baked cookies and cakes like she did and keeps her memory alive.”
What is your favorite bar tool or utensil? “My muddler.”
Did you ever refuse to serve someone? “Yes, I escorted him with security to his room.”
Did you ever invent a drink? “Yes, the Double Tini that’s based on Doubletree’s fabulous chocolate chip cookies that all the guests receive. It is the drink I am going to make.”
Burke gave us the recipe for this dessert drink.
DOUBLE TINI
INGREDIENTS
1 ounce Frangelico hazelnut liqueur
1 ounce Smirnoff vanilla vodka
1 ounce dark creme de cacao
1 ounce French vanilla cream
Ice
Chocolate syrup to drizzle
Piece of a chocolate chip cookie for garnish
Chilled martini glass
PREPARATION
-- Fill a shaker with ice.
-- Pour in the liqueur, vodka, creme de cacao and cream.
-- Shake well.
-- Drizzle chocolate syrup around the inside of a chilled martini glass.
-- Strain and pour liquor into the glass.
-- Garnish with a piece of the cookie.
